Dr Federica Amati is an Association for Nutrition (AfN) accredited Nutritionist with a PhD in clinical medicine research. She works with Imperial College London and the WHO Collaborating Centre for Education and Training on research projects across nutrition, public health and mental health. As a nutrition scientist and lead of science communications for the personalized nutrition company ZOE, co-founded by Tim Spector, Federica focuses on improving overall dietary quality following the principles of evidence-based nutrition science. Federica is frequently featured in various media outlets as an expert in harnessing the power of our diet and microbiome for better health. Jane Baxter discovered a passion for cooking while at Leeds University and went on to work with Joyce Molyneux at The Carved Angel, who greatly influenced her culinary style, and at The River Cafe, which sparked her love for Italian cuisine. She is the author of several award-winning cookbooks, including two Riverford Farm books, Leon Fast Vegetarian, Leon Happy Salads and Leon Fast & Free. In 2016, she founded Wild Artichokes in Kingsbridge, which features an Italian-inspired, vegetable-based, seasonal menu. She continues to cook and develop new dishes in and around South Devon and is involved with the Abergavenny Food Festival.
