Shelly Shiflett is a mom, wife, and nurse whose world changed when her youngest son, Christopher, was diagnosed with celiac disease in 2015. Since the diagnosis, she has focused on learning about celiac disease, the dietary challenges, and its impact on social and family dynamics. Shelly has a bachelor's and master's degree in nursing and is certified as a Celiac Disease Patient Advocate. Christopher Shiflett went from an everyday, young teenager to being diagnosed with celiac disease and facing new challenges. Christopher experienced the symptoms, the diagnosis process, and the change in diet and lifestyle required to live with this autoimmune disease. Working hard to create the best perspective and move beyond his diagnosis, Christopher completed a degree in aerospace engineering from Virginia Tech and is pursuing a career, and culinary adventures, in New York.
