In agricultural production, one of the sectors that stands out worldwide for its economic and social relevance is milk production. Although food items tend to be produced in complex systems composed of several agents and with processes connected to supply chains, the dairy supply chain is seen as relatively simple and includes three main stakeholders: dairy production, processing and packaging, and retail. However, this simplicity of chain management changes in a scenario in which milk production is concentrated in a high number of small-scale producers, who occupy areas where other crops are less viable. Eduardo Satolo is an Associate Professor in Faculty of Science and Engineering at São Paulo State University (UNESP), Tupã Campus, lecturing on Business Administration course and Agribussiness and Development Post Graduation Program. Post-Doctorate in Production Engineering from UFF (2018), doctor in Industrial Engineering from the Universidade Metodista de Piracicaba (UNIMEP). Has a master’s in Production Engineering from UNIMEP is a graduate in Production Engineering from UNIMEP. Priscilla Mac-Lean is an Assistant Professor in School of Science and Engineering at Sao Paulo State University (Unesp), Tupã Campus, Brazil, lecturing on Biosystems Engineering course and Agribussiness and Development Post Graduation Program. Doctor in Animal Quality and Productivity by the Postgraduate Program in Animal Science from the University of São Paulo (2012). Master in Animal Production by the Postgraduate Program in Animal Science (2008) and undergraduated in animal science (2005) from Universidade Estadual de Maringá (UEM). Her research interests include the areas of improvement of the animal production chain evaluating good practices related to product quality and quantity, ambience and animal biometeorology and welfare, working mainly in the productive chains of dairy cattle and sericulture.
