Instead of being all about what the author doesn't or won't eat, the cookbook is a wholehearted embrace of really good food that-oh, by the way-is entirely plant-based. Rarely does Joensson fall back on meat analogs. She does use tofu and seitan, although not obsessively, and she includes recipes for making them from scratch. - HUNGRY TRAVELERS
